Ingredients

Traditional Fermented Method

  • 1 cup jowar (sorghum) – 250 ml

  • ½ cup urad dal

  • ¼ cup raw rice

  • 1 tbsp fenugreek seeds (methi seeds)

  • Salt – to taste

  • Water – as needed for grinding

  • Ghee or oil – for cooking


Preparation

1️⃣ Soak Ingredients

  • Soak jowar, urad dal, raw rice, and fenugreek seeds separately in enough water for at least 6–8 hours or overnight. This helps soften the grains and improves fermentation.

2️⃣ Grind the Batter

  • Drain the soaked ingredients.

  • Grind the urad dal and fenugreek seeds to a smooth, fluffy paste.

  • Grind jowar and rice to a slightly coarse batter.

  • Combine both batters in a large bowl. Add water as needed to get a smooth, pourable consistency.

3️⃣ Ferment the Batter

  • Cover the bowl with a clean cloth and leave it in a warm place for 8–12 hours. The batter should rise and have tiny bubbles—this is a sign that it’s perfectly fermented.

4️⃣ Prepare the Dosa

  • Stir the fermented batter gently and add salt to taste.

  • Heat a non-stick pan or tawa on medium heat. Grease lightly with ghee.

  • Pour a ladleful of batter and spread in a circular motion to form a thin dosa.

  • Drizzle a little ghee around the edges and cook until golden brown and crisp. Flip if desired, though usually one side cooks perfectly.

5️⃣ Serve Hot

  • Serve your crispy, soft Jowar Dosa hot with coconut chutney, tomato chutney, or sambar. For extra indulgence, add a dollop of ghee on top.
