About the Recipe

Pickles hold a very special place in traditional kitchens. Across many households, a simple meal instantly becomes more exciting when served with a spoonful of homemade achar. The tangy aroma, bold spices, and vibrant flavors make pickles a beloved side dish that complements everything from dal-chawal to hot rotis and parathas.

Among the many varieties of pickles, Instant Sem Achar (Flat Beans Pickle) is a quick and delicious option that doesn’t require long fermentation or days of waiting. Unlike traditional pickles that need to sit in sunlight for days, this recipe can be prepared in just a few minutes while still delivering that classic pickle flavor we all love.

Flat beans, also known as sem, have a naturally mild flavor and slightly crunchy texture, making them perfect for absorbing aromatic spices and mustard oil. When combined with roasted whole spices like coriander, fennel, cumin, and mustard seeds, the result is a bold, spicy, and fragrant pickle that elevates any meal.

The beauty of this instant pickle is its simplicity and freshness. The sem remains slightly crunchy, while the roasted spice mix adds warmth and depth. Mustard oil gives the pickle its authentic taste, while a touch of vinegar enhances the tanginess and helps preserve the flavors.

Whether you're looking for a quick side dish, a flavorful accompaniment for everyday meals, or a new way to enjoy seasonal vegetables, this Instant Sem Achar is a wonderful recipe to keep in your kitchen repertoire.

Ingredients

Main Ingredients

  • 4–5 tbsp Mustard oil

  • 250 g Sem (flat beans)

  • 1 tsp Turmeric powder

  • 1 tbsp Red chilli powder

  • ½ tsp Kalonji (nigella seeds)

  • Salt to taste

Dry Roast & Coarsely Grind

  • ½ tbsp Coriander seeds

  • 1 tsp Cumin seeds

  • ½ tsp Fennel seeds

  • 1 tsp Black mustard seeds

  • 1 tsp Yellow mustard seeds

  • ¼ tsp Fenugreek seeds (methi)

  • 1 tsp Kalonji

  • 4 Dry red chillies

Preparation

Preparing the Sem (Flat Beans)

Start by washing the sem (flat beans) thoroughly under running water. Once cleaned, wipe them dry with a kitchen towel. Removing excess moisture is important when making pickles because it helps maintain the texture and shelf life.

Next, peel off the stringy edges of the beans and cut them lengthwise. This allows the beans to absorb the spices more evenly while cooking.

Set the prepared beans aside while you prepare the spice mixture.

Preparing the Pickle Spice Mix

The heart of any good pickle lies in its spice blend. Dry roasting whole spices enhances their natural aroma and brings out deeper flavors.

In a pan, lightly dry roast the following spices:

  • Coriander seeds

  • Cumin seeds

  • Fennel seeds

  • Black mustard seeds

  • Yellow mustard seeds

  • Fenugreek seeds

  • Kalonji

  • Dry red chillies

Roast them gently on low heat until they release a fragrant aroma. Be careful not to burn the spices, as that could make the pickle bitter.

Once roasted, allow the spices to cool slightly. Then grind them coarsely using a grinder or mortar and pestle. The texture should remain slightly coarse rather than a fine powder, as this adds character and texture to the pickle.

To this ground spice mixture, add:

  • Turmeric powder

  • Red chilli powder

  • Kalonji

Mix everything well so the spices combine evenly.

Cooking the Instant Sem Achar

Heat mustard oil generously in a pan. Mustard oil is essential in many traditional pickles because of its strong aroma and preservative properties.

Once the oil becomes hot, add a pinch of asafoetida (hing). This ingredient adds a subtle depth of flavor and aids digestion.

Now add the chopped sem (flat beans) to the pan. Sauté them lightly for a few minutes until they begin to soften but still retain their crunch.

Next, add the prepared spice mixture along with salt and a small splash of vinegar. The vinegar adds a slight tang and helps balance the strong spices.

Mix everything thoroughly so the beans are evenly coated with the flavorful masala. Cook for a short time until the sem is tender yet still crunchy.

Once done, turn off the heat and allow the pickle to cool slightly.
