Ingredients
For the Halwa:
1 kg red carrots, grated
1 cup desi ghee
2 cans sweetened condensed milk
½ litre milk
½ tsp cardamom powder
Dry Fruits (optional but recommended):
1 tsp almonds
1 tsp cashew nuts
1 tsp raisins

Roast the carrots:In a pan, lightly roast the grated carrots over medium heat for 10 minutes until fragrant and slightly color-changed. Stir continuously to prevent sticking.
Add condensed milk and milk:Mix in the sweetened condensed milk, then add regular milk. Cover the pan and stir occasionally, scraping the edges. Cook until the milk reduces by half.
Add ghee:Pour in the ghee and stir well. Reduce heat to low-medium and cook for 30–45 minutes, stirring frequently until all liquid evaporates and the mixture is creamy.
Add flavor and garnish:Mix in cardamom powder. In a separate pan, roast dry fruits in a little ghee and add them to the halwa.
