Ingredients

For the cake batter:


  • 1.5 cups of flour

  • 1 tsp of baking powder

  • ½ tsp of baking powder

  • ¾ cup of brown sugar

  • 3 eggs at room temperature

  • ½ cup vegetable oil or unsalted butter

  • ¼ tsp cinamon powder

  • ½  tsp ginger powder

  • ¼ tsp clove powder 

  • ¼ tsp nutmeg powder (optional) 

  • 2 tsp orange zest


For the Nuts 


  • ¾  cup of black raisins 

  • ¾ cup of golden raisins

  • 1 cup tooti frooti ( if you can substitute it with other dry fruits listed if tooti frooti isnt available)

  • ¾ cup dried cranberries

  • ¼ cup dried currants

  • ¾ cup of dried apricots, diced 

  • 3 tsp of cherries, canned or even dried works

  • ¼ cup walnuts, chopped

  • ¼ cup almonds, sliced or chopped

  • ¼ cup unsalted cashews chopped


For the soak


Take a saucepan and add ¾ cups of orange juice and juice of half lemon. Add the raisins, tooti frooti, apricots, cranberries, currants, cherries and bring it to a boil, or till the sauce reduce to half. Turn off the heat and let it cool.


Preparation

Preheat the oven to 392F or 200C.


Step 1: Take a bowl, swift in the flour, baking powder, baking soda and mix well.


Step 2: Take a bowl and add the brown sugar and oil or butter and mix well till combined. 


Step 3: Now add the eggs and whisk well. No need to whisk too hard, as we dont need the frothy consistency here. Just combine everything well.


Step 4: Now add the dry ingredients and mix


Step 6: Now add the soaked nuts along with the cashew nuts, almonds, and walnuts.Add the orange zest and blend everything together nicely. 


Step 7: Take a 8inch pan ( round one) and add a parchment paper. Now transfer the batter to the pan and bake it at 392F or 200C for 45 minutes or until the cake is fully cooked. Insert a toothpick to check, it should come out clean and no batter sticking to the toothpick

Step 8: Once the cake has cooked well and has achieved a golden crust, place it on a cooling rack. Once cooled, enjoy the plum cake with your loved ones:)
