Ingredients

  • 100 g ghee (½ cup)

  • 70 g powdered sugar (½ cup)

  • 130 g maida / all-purpose flour (1 cup)

  • 50 g besan / gram flour (½ cup)

  • 25 g sooji / semolina (2 tbsp)

  • 1 tsp cardamom powder

  • Almond flakes (for topping)

  • 1 pinch salt

Preparation

1. Prepare the Dough

Start by adding ghee and powdered sugar to a mixing bowl. Whisk or beat them together until the mixture becomes light, creamy, and smooth. This step helps create the soft texture that Nankhatai is known for.

2. Mix the Dry Ingredients

In another bowl, combine:

  • Maida (all-purpose flour)

  • Besan (gram flour)

  • Sooji (semolina)

  • Cardamom powder

3. Combine Wet and Dry Mixtures

Gradually add the dry ingredients into the ghee mixture. Mix gently until a soft dough forms. Avoid overmixing, as the cookies should remain delicate and crumbly.

If the dough feels too dry, you can add 1–2 teaspoons of ghee to bring it together.

4. Shape the Cookies

Take small portions of dough and roll them into smooth balls. Slightly flatten them using your palm.

Place the cookies on a baking tray lined with parchment paper, leaving some space between each cookie.

5. Add Toppings

Press almond flakes on top of each cookie for a beautiful and delicious finish.

6. Bake

Preheat your oven to 170–180°C (340–350°F).
