Ingredients

For Chicken Marinade:

  • 850 gm chicken

  • 1 tbsp ginger-garlic paste

  • 1 tbsp coriander powder

  • ½ tsp turmeric powder

  • 1 tbsp Kashmiri red chili powder

  • ½ tsp cumin powder

  • ½ tsp black pepper powder

  • 1 tsp garam masala

  • ½ tsp chaat masala

  • Juice of 1 lime

Marinate chicken for at least 30 minutes.

For Curry:

  • 4–5 sliced onions

  • 6–7 soaked cashews

  • Oil for frying

  • 1 black cardamom

  • 2–3 cloves

  • 1 small cinnamon stick

  • 1 tbsp ginger-garlic paste

  • 1 cup tomato puree

  • 2 tbsp beaten yogurt

  • 1 tsp coriander powder

  • ½ tsp turmeric powder

  • 1 tbsp Kashmiri red chili powder

  • 1 tsp cumin powder

  • ½ cup water

  • ½ tsp garam masala

  • Fresh coriander leaves & slit green chili for garnish


Preparation

1. Marinate the Chicken

Mix chicken with ginger-garlic paste, all dry spices, and lime juice. Set aside for 30 minutes to infuse flavor.

2. Prepare Cashew-Onion Paste

  • Fry sliced onions until golden brown.

  • Fry soaked cashews until lightly golden.

  • Grind both into a smooth paste and keep aside.

3. Fry the Chicken

  • In the same pan, fry the marinated chicken until golden on both sides.

  • Remove and set aside.

4. Cook the Curry

  • In remaining oil, sauté whole spices (black cardamom, cloves, cinnamon).

  • Add fried chicken, water, and garam masala.
