  • 350 g ladyfinger (okra), washed, dried, and chopped into medium-sized pieces

For the Yogurt-Spice Mixture

  • ½ cup curd (yogurt)

  • 1 tbsp coriander powder

  • 1 tsp cumin powder

  • ½ tsp turmeric powder

  • ½ tsp red chili powder

  • 1 tbsp Kashmiri red chili powder

  • 1 tsp garam masala

  • Salt to taste

For the Tadka (Tempering)

  • ½ tsp cumin seeds

  • 2 green chilies, finely chopped

  • 2 onions, chopped

  • 1 tsp ginger-garlic paste

  • 2 tbsp oil

Preparation

Step 1: Prepare the Okra

Wash the okra thoroughly and pat it dry. Slice it into medium-sized pieces. Drying the okra well is crucial to reduce sliminess while cooking.

Step 2: Make the Yogurt-Spice Mixture

In a bowl, combine yogurt with coriander powder, cumin powder, turmeric, red chili, Kashmiri red chili, garam masala, and salt. Mix into a smooth, uniform paste and set aside.

Step 3: Sauté the Okra

Heat a tablespoon of oil in a pan. Add the chopped okra and sauté lightly over medium heat. Sprinkle a pinch of turmeric and salt, and cook for about 5 minutes until the okra is slightly tender. Remove and set aside.
