3–4 Cloves
2–3 Cardamom pods
1 tsp Shahi Jeera
Other Ingredients
2 Onions (finely sliced)
5 Green Chillies (slit)
2 tsp Ginger Garlic Paste
Tomato Puree (from 2–3 tomatoes)
¼ tsp Turmeric Powder

2 tsp Coriander Powder

1½ cups Water
2 tsp Garam Masala
Fresh Coriander Leaves (for garnish)
Preparation
👩🍳 Step-by-Step Method
1️⃣ Sauté the Whole Spices
Heat oil in a pan or kadai. Add cinnamon, cloves, cardamom, and shahi jeera. Let them sizzle until aromatic—this is where the base flavor begins.
2️⃣ Cook the Onions
Add sliced onions and sauté until they turn soft and lightly golden. This step builds the sweetness and depth of the curry.
3️⃣ Add Aromatics
Stir in ginger-garlic paste and green chilies. Sauté for a minute until the raw smell disappears.
4️⃣ Prepare the Masala
Add tomato puree and cook until the oil starts to separate—this is key for that rich, restaurant-style gravy.
Now add turmeric, cumin powder, coriander powder, Kashmiri chili powder, and salt. Mix well and cook for another 2–3 minutes until fragrant.
5️⃣ Add Mushrooms
Add the sliced mushrooms and mix well so they are coated with the masala. Cook for 4–5 minutes—they will release water and shrink slightly.
6️⃣ Simmer the Curry
Pour in 1½ cups of water and mix gently. Cover and let it cook for 8–10 minutes on medium flame until the mushrooms are tender and the gravy thickens.
7️⃣ Final Touch
Add garam masala and give it a final stir. Garnish generously with fresh coriander leaves.

💡 Tips for Perfect Mushroom Curry
Don’t overcook mushrooms: They cook quickly and can become rubbery if overdone.
Cook the masala well: Letting the oil separate from the tomato base enhances flavor.
Adjust spice level: Reduce green chilies or chili powder if you prefer milder curry.
Use fresh mushrooms: They give the best texture and taste.
